The long wait is over- Rush Creek Reserve is the most sought after cheese in Wisconsin. Only made in the autumn, as the diet of Uplands cows begins to change from the fresh pastures of summer to the winter's dry hay. While Pleasant Ridge Reserve is aged months, Rush Creek is designed to show off the richer texture of their hay-fed milk and the delicate ripeness of a soft, young cheese. Rush Creek is made with raw milk, and is inspired by the French Vacherin Mont d' Or and is bound in spruce bark, which gives sahpe to the soft round and impart a sweet, woodsy flavor to the cheese. Combined with the savory flavors born from the rind, this gives the custard-soft paste a deep but delicate richness, reminiscneet of beef broth or finely cured meat. Pleasant Ridge Reserve Package 1/2 lb. wedge and companions
Our top selling cheese. Uplands Cheese is 45 minutes outside of Madison, North of Dodgeville, Wisconsin is an expanse of rolling hills and valleys that were left untouched by the Ice Age glaciers. These are the same glaciers that later helped to form Lake Superior, Lake Michigan, and the many lakes dotting the Wisconsin landscape. The untouched area is known as the Uplands and it is here where Mike and Carol Gingrich have their farm and Uplands Cheese Company. In 2007 Andy Hatch took over the reins as the cheesemaker, general manager.
Uplands cows are free to graze on three hundred acres of ridgetop land where the soil is ideally adapted to producing rich grasses and other grazing herbs. Because they make sure their cows graze in a rotational manner, they are certain to nosh fresh pasture every day.
Pleasant Ridge Reserve is the kind of cheese that shows how truly amazing artisinally-produced American cheese can be. It is rich and hearty with complex layers of caramel and an intriguing tart fruitiness.
