Here’s what we are featuring this month for our Cheese of the Month Club:
1. BellaVitano Merlot – Sartori Cheese - Plymouth, WI
Two cheese experiences in one! This cow’s milk cheese falls somewhere
between a cheddar and a parmesan (a cheddesan?). Sartori makes a variety of
cheeses with this same base. The one I’ve chosen for you has been marinated in
rich merlot wine resulting in that beautiful purple-spotted exterior. Enjoy simply on
a cracker or, once you’ve snacked your way through the merlot-kissed rind, use
the remaining interior any way you would a parmesan cheese. Delicious paired
with Merlot wine (of course) and semisweet chocolates.
2. Red Rock – Roelli Cheese Haus - Shullsburg, WI
What a beautiful cheese, no? Aged 3-6 months, this American-style cow’s
milk cheddar is perfect sliced on a cheese board or enjoyed on a sandwich. This
is considered a "blue-cheddar" cheese. The exterior of the double annatto
cheese is pierced to allow blue veining to occur before the cave-aging process.
The result? Bites of pure orange taste only of cheddar while tastes containing the
blue veins take on a blue cheese quality. A truly unique combination. Enjoy with
Pinot Noir wine, a dark porter ale, or dried cherries.
3. Evalon – LaClare Farms - Chilton, WI
Crafted by Katie Hedrich, the youngest female cheesemaker in the country, this goat’s milk gouda won Best in Show at the U.S. Cheese Championship last year! The silky white cheese carries an almost floral quality as the flavors develop the longer they linger. This is a cheese we are truly proud of. Especially yummy with a crisp Pinot Gris wine, any IPA, or pear preserves.
